Dacquoise to Duxelles

Dacquoise (da kwahz) A disk shaped, nutty flavored meringues stacked and filled with sweetened whipped cream.  Often served with fruits.

Duxelles (dook sehl) A mixture of finely chopped herbs, mushrooms and shallows cooked in a butter until paste in texture.  Typically used to flavor sauces, soups and other mixtures.
